Seared Skirt Steak with Fresh Berry Sauce and Potato Crisps

SEARED SKIRT STEAK

 

INGREDIENTS

5 oz skirt steak

1 tsp ground fresh coffee

1 tsp cracked black pepper

½ tsp garlic powder

Zero fat cooking spray

DIRECTIONS

Combine coffee, pepper and garlic powder and rub on steak. Using zero fat cooking spray, cook steak in a skillet, oven or on a grill to your preference (well, medium-well, etc.).

 

BERRY SAUCE

INGREDIENTS

2 tbsp fresh berries (black, blue or raspberries)

1 tbsp sucralose

2 tbsp natural applesauce

1 tbsp red wine, dry

1 tsp tarragon, diced fine

DIRECTIONS

Place all ingredients in a small saucepan and place on low heat. Stir constantly to blend all into a consistent sauce, allowing berries to break down naturally. Hold sauce to serve.

 

POTATO CRISPS

INGREDIENTS

1 small fresh potato sliced into ¼" slices.

¼ tsp white pepper

½ tsp garlic powder

½ tsp onion powder

½ tsp black pepper

½ tsp dry basil

½ tsp dry parsley

Zero fat spray

2 tbsp fat-free cream cheese

1 tsp diced fresh green onion

DIRECTIONS

Blend all seasoning in a small mixing bowl until consistent. Spray potato slices with zero fat cooking spray, then sprinkle seasoning onto potato slices. Spray a saute' pan with zero fat cooking spray and cook potatoes (seasoned side down) on medium high. Brown for two minutes per side, then turn heat off while holding potatoes in pan for plating. Mix cream cheese with green onion and place a small dollop of mixture on top of each slice of potato when on plate.

 

SEARED BRUSSELS SPROUTS

INGREDIENTS

½ cup Brussels sprouts, cut in half

Zero fat cooking spray

1 tsp minced garlic

1 tbsp diced yellow onion

½ tsp black pepper

¼ tsp crushed red pepper

1 strip bacon

1 tbsp diced red bell pepper

DIRECTIONS

Bake 1 strip of bacon until crisp, then dry with paper towel. Dice bacon and hold for recipe. Spray pan with

zero fat cooking spray and place Brussels sprouts with the cut side down. Add all ingredients in sauté pan with Brussels sprouts and toss until onions are translucent.

Slice skirt steak against the grain and place around edge of plate. Place the potatoes next to beef, and then Brussels sprouts next to potatoes. Top your beef with berry sauce, leaving half of sliced beef visible to create a great plate visual. Enjoy!
