Grilled Shrimp with Sweet Potato Fries

GRILLED SHRIMP WITH SWEET POTATO FRIES AND SEARED SPINACH & ONIONS

Ingredients

5 large shrimp skewered on a stick

½ oz white pepper

½ oz black pepper

½ oz garlic powder

½ oz onion powder

½ oz paprika

1 oz olive oil

½ oz rice flour

2 oz white wine

4 oz mixed greens

COOKING PREPARATIONS FOR SHRIMP

Mix all dry ingredients together in bowl. Season shrimp on skewer with seasoning.  Place ¼ oil in pan to sauté shrimp or place over flame.  Take pan where shrimp were seasoned and deglaze with wine.  Add flour and make a roux sauce for shrimp and hold.

 

SWEET POTATO FRIES:

Ingredients:

½ medium sweet potato cut into long fries (4oz) 12 pieces

1/8 tspn cinnamon

¼ tspn garlic powder

1 tbspn minced fresh parsley

¼ tspn onion powder

COOKINGINSTRUCTION FOR GRILLED SWEET POTATO FRIES

Place whole sweet potato in boiling water and cook till a toothpick removes easily.  After boiling divide in half and slice fry style.  Mix all seasoning in a small bowl.  Lightly dust all fries with seasoning.  Spray potato fries with zero fat spray and place on grill and cook till lightly brown on all sides. 

SEARED SPINACH WITH ONIONS

Ingredients

1 cup fresh spinach

1 tbspn garlic

2 tbspn circular cut red onion

½ tspn bacon diced fine and drained of oil

½ tspn of oil

1/8 tspn crushed red pepper

¼ tspn black pepper

½ cup sliced mushrooms

1 oz white wine

COOKINGINSTRUCTION FOR SEARED SPINACH WITH ONIONS

Place oil in pan with onion, garlic and mushroom.  Add pepper and seasoning and sauté till brown.  Deglaze with wine and add bacon to pan with spinach on the bottom of pan.  Sear on high heat till spinach wilts and remove immediately.  Place all ingredients on top of spinach for the presentation.
