Turkey Sliders on Sweet Potatoes with a Moroccan Salad

TURKEY SLIDERS ON SWEET POTATOES WITH MOROCCAN SALAD AND DILL SAUCE

Ingredients

4 oz ground turkey

½ tspn diced jalapenos

½ tspn ground whole wheat bread crumbs

½ tspn black pepper

½ tspn garlic powder

½ tspn onion powder

1 egg white

TURKEY BURGER PREPARATION

Mix all ingredients in mixing bowl and form 3 small patties. Grill on medium high till brown on both sides

SWEET POTATO BUNS

Ingredients

½ sweet potato medium large

SWEET POTATO BUN PREPARATION

Slice sweet potatoes 3/8" thick. On low heat sauté potatoes, until lightly brown on both sides.

Remove from heat and save for burger buns.

MOROCCAN SALAD

Ingredients

½ cup kale

1 oz Quinoa White Premium

1 oz minced garlic

2 oz diced onion

2 oz vegetable stock salt free fat free

1 oz diced shredded carrots

1 oz diced green onion

2 oz garbanzo beans coarse chopped

1 oz diced dried cranberries

½ oz blanched and browned almonds

½ tspn olive oil

MOROCCAN SALAD PREPARATION

Cook quinoa in stock till tender. Place oil in sauté pan and add oil, carrots, onions, garbanzo beans, cranberries and cook till translucent. Toss in kale and garnish with almonds

DILL SAUCE

Ingredients

1 tbspn diced dill

1 tspn diced garlic

2 tbspn fat free yogurt

½ tspn Dijon mustard

¼ tspn black pepper

½ tspn garlic powder

½ tspn onion powder

DILL SAUCE PREPARATION

Mix all ingredients in small mixing bowl and serve
