Portabella and Fresh Vegetable Plate

FAMILY STYLE VEGETARIAN PORTABELLA & VEGGIE PLATE WITH GRILLED SPICED PEACHES

Ingredients

Zero fat spray

16 small portabella mushroom caps

2 cup of yellow squash sliced thin

2 cup of green zucchini sliced thin

4 tbspn minced garlic

4 cup fresh spinach

10 slices fresh tomatoes

2 cup of julienne yellow onion

1 tspn cayenne pepper

2 tbspn diced basil

2 tspn of black pepper

2 tspn powder garlic

2 tspn powder onion

VEGETARIAN PLATE PRESENTATION

Mix seasoning:  onion, garlic and pepper.  Use to season all dishes in this recipe.  Spray pan with zero fat spray.  Place portabella, zucchini and squash in pan with garlic and ½ of the onions.  Add seasoning and cook till brown.  Add basil and remove from heat.  Heat pan and sear ½ of onions with spinach with tomatoes.  Place on the bottom of the plate and use as the foundation of the dish.

GRILLED SPICED PEACHES

12 medium nectarines sliced thinly without seeds

1 tbpn cinnamon

6 tbspn diced onion

2 tbspn rice flour

pinch nutmeg

1/2 cup granola

zero fat spray

COOKING INSTRUCTIONS FOR PEACHES

Season peach slices with cinnamon, rice flour and nutmeg.  Spray pan with zero fat and place onions in pan sear peaches till light brown on both sides, approximately 2 minutes per side.  Top with granola and put on baking pan in oven at 500 degrees for 6-8 minutes.  This can be done in a large skillet as well.  Remove and serve.
