Renowned Mississippi chef, culinary instructor and author Chef Po was recently a guest on “Now You’re Talking with Marshall Ramsey” and shared her love of family, cooking and Southern flavors. Marshall and Chef Po talked about searching for a tea cake recipe that matched her grandmother’s. Here’s a classic Southern Tea Cake recipe for you to try:
Ingredients:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup whole milk
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream butter and sugar: In a separate large bowl, beat butter and sugar until light and fluffy.
- Add eggs and vanilla: Mix in eggs one at a time, then add vanilla extract.
- Incorporate dry ingredients: Gradually add the flour mixture, alternating with the milk, mixing until a soft dough forms.
- Roll and cut: Lightly flour a surface and roll the dough to about ¼-inch thickness. Cut into circles or desired shapes.
- Bake for 8-10 minutes until the edges are lightly golden.
- Cool and enjoy: Let the tea cakes cool on a wire rack before serving.
These soft, cake-like cookies have a nostalgic charm and pair perfectly with coffee or tea! You can also add your own personal variations, like adding nutmeg or lemon zest!
