SEARED SALMON WITH PESTO AND VEGETABLE FALLOW

Seared Salmon

Ingredients

1 tspn avocado oil

1 5 oz piece of salmon with skin on

1 tspn black pepper

COOKING INSTRUCTIONS FOR SALMON

Pat and coat the salmon with the avocado oil, leaving small amount to place in sauté pan.  Place skin side down in skillet on medium high and sear for 5 minutes.  Turn and cook additional 3 minutes and remove.

SEARED FALLOW WITH VEGETABLES

Ingredients

1 cup veggie stock

2 tbspn diced red onion

1/3 cup farrow  

½ tspn black pepper

1 squeeze lemon

COOKING INSTRUCTIONS FOR FALLOW

Place avocado oil in pan and add fallow.  Sear for 2-3 minutes and toss.  Add stock and simmer until stock is absorbed into fallow (approx. 7 minutes)  Remove from heat and add vegetables, lemon squeeze and toss together to serve.

SQUASH FRIES AND CHERRY TOMATOES

Ingredients

1 tspn avocado oil

1 cup julienne yellow squash

½ cup cherry tomatoes

2 tbspn diced red onion

½ tspn black pepper

1 squeeze lemon

COOKING INSTRUCTIONS FOR SQUASH AND TOMATOES

Place ½ oil in sauté pan and place yellow squash.  Lightly brown and cook.  Place onions, pepper and sauté till translucent.  Add tomatoes and sear till black spots appear.  Remove from heat and add both the yellow squash and tomatoes to fallow.  Squeeze lemon on top.

BASIL PESTO

Ingredients

½ cup diced basil chopped fine for pesto

1 tbspn pine nuts crushed for pesto

1 tbspn shredded parmesan

½ tspn avocado oil for pesto

½ tspn black pepper

1 lemon squeeze

COOKING INSTRUCTIONS FOR BASIL PESTO

Place coarsely chopped basil, pine nuts, pepper, parmesan, avocado oil and lemon in bowl and mince.  Divide and use half in fallow and half to garnish salmon when plating
