Grilled Cauliflower with Lean Pork Loin

GRILLED CAULIFLOWER WITH LEAN PORK LOIN 

Ingredients

  • 1 1/2 “thick large slice of fresh Cauliflower
  • Spray of zero fat can
  • 4 oz Lean Pork Loin
  • 1 tspn garlic powder
  • 1 tspn onion powder
  • 1 tspn black pepper
  • 1 tbspn paprika
  • 1 large fresh green for plate base: Collard, Swiss Chard whatever available

 

PREPARATION
Mix all seasoning in a small bowl.  Spray pork & cauliflower with zero fat spray and sprinkle seasoning evenly. Spray pan on medium high heat and “grill” cauliflower first then pork.  Let rest.

 

SWEET POTATO PUREE

Ingredients

  • ½ small Sweet Potato 
  • 1 tbspn minced garlic
  • 2 tbspn diced red onion
  • 1 pinch cinnamon
  • 1 tspn finely diced fresh basil
  • 1 tspn cracked black pepper

 

PREPARATION
Dice sweet potato and sear till tender with seasoning. Mash down with a spoon and fork. Stir till smooth and creamy & scoop to plate with large spoon. 

 

SEARED BEETS 

Ingredients

  • Zero Fat Spray
  • 1 small Red Beet sliced 3/8” 
  • ½ tspn garlic powder
  • ½ tspn onion powder 
  • 1/2 tspn cracked black pepper

 

PREPARATION
Mix all seasoning in small bowl & dust sliced beets.  Spray pan with zero fat spray and sear beets for 2-3 minutes per side till slightly brown and tender.  Place around potato puree on beet greens if available

 

FRESH HERB PESTO

Ingredients

  • 1 tbspn fine diced basil
  • 1 tbspn fine chopped green onion
  • 2 tbspn fine chopped spinach
  • 1 tspn finely chopped garlic
  • ½ tspn canola oil
  • ½ tspn black pepper
  • 1 tspn ground parmesan
  • 1 tspn apple juice unsweetened
  • 1 tbspn fresh plain zero fat yogurt
  • ½ tspn fat free cream cheese

 

PREPARATION
Blend all ingredients in small bowl.  Careful to blend herbs with apple juice, cream cheese and parmesan.  Place in small cup on plate.
