ASIAN GRILLED GROUPER WITH THAI DIPPING SAUCE
Ingredients
1 tsp onion powder
1 tsp garlic powder
1 tbsp ground peanuts 2 tbsp rice flour
1⁄2 tsp ground coriander 1⁄2 tsp allspice
1 tsp minced garlic
2 egg whites
1 oz sesame oil
1 oz canola oil
3-4 grouper filets
PREPARATION FOR ASIAN GRILLED GROUPER
Mix all dry ingredients and minced garlic into a bowl to create a dredge. Dip the fish filets in the egg whites, then cover with the dredge. Place both sesame and canola oil into hot pan and seasoned filets. Cook over medium high heat three minutes, then flip and cook for three minutes. Try not to move the filets while they cook! Remove from heat and hold for plating.
RICE AND VEGETABLE SIDE DISH Ingredients
2 cups vegetable stock
1 cup brown rice
1 oz sesame oil
1 oz canola oil
1 cup tri-color bell peppers 1 tbsp minced garlic
3 oz chopped red onion
1 cup cooked crawfish
1 tbsp chopped cilantro
1 tbsp chopped pecans
1⁄2 tsp black pepper
PREPARATION FOR RICE AND VEGETABLES
Cook the rice in the vegetable stock until tender. Place oil in pan and add garlic, onion and peppers. Cook for one minute, then add cooked crawfish and asparagus. Cook for a few more minutes, then add the cilantro, pecans and cooked rice. Toss everything together and cook a few more minutes. Remove from heat.
THAI DIPPING SAUCE Ingredients
1 tbsp chopped green onion 1 tbsp chopped cilantro
1 oz canola oil
1 tbsp dry coconut
2 oz skim milk
1 tbsp minced onion
1⁄2 oz sesame oil
1 pinch pepper flakes
1 tsp sriracha sauce
1 tsp peanut butter
2 tbsp Greek yogurt
1 tsp black pepper
1 oz vegetable stock
PREPARATION FOR THAI DIPPING SAUCE
Mix all ingredients in a bowl until well combined.
