Coffee-crusted Pork Ingredients

  • 3 oz ground coffee
  • 1 tbsp Creole mustard
  • ½ tsp white pepper
  • 1 tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp basil, fine-chopped
  • ½ tsp oil

Coffee-crusted Pork Preparation
Spread mustard evenly over pork loin. In separate bowl mix all other ingredients. Dust the mixed ingredients on both sides of pork loin. Place crusted loin in medium high pan and do not move for 3 minutes. Turn over and cook additional 4 minutes while reducing heat. Let pork stand in pan and use to plate.

Blackberry Broccoli Sauce Ingredients

  • ½ tsp oil
  • 3 oz fresh blackberries, quartered
  • 4 oz unsweetened cranberry juice
  • 2 oz applesauce
  • ½ tsp black pepper
  • 1 tsp minced onion
  • 1 tsp minced garlic
  • Pinch of crush red pepper
  • 1 tsp squeezed lemon juice
  • 4 oz broccoli florets, cut individually
  • ½ tsp brown rice flour (if needed for desired thickness)

Blackberry Broccoli Sauce Preparation
Place oil in pan, add garlic, onion, and pepper and brown. Add crushed red pepper, blackberries and broccoli and toss. While cooking, add lemon. Slowly add cranberry juice, then applesauce. Let sauce simmer and add rice flour if sauce needs to be thickened.

Sweet Potato Spears & Seared Tomatoes Ingredients

  • ½ tsp oil
  • 3 oz water
  • 3 oz sliced tomato, ½" thick
  • 1 small sweet potato, cut in quarters lengthwise
  • 1 tbsp fresh basil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp white pepper
  • 1 tsp black pepper
  • 1 tsp dry mustard

Sweet Potato Spears & Seared Tomatoes Preparation
Sprinkle water over potatoes and tomatoes and dust with mixture, turning evenly and covering all sides. Place oil in pan and lay potatoes flat. Sear potatoes on each side until light brown. Mix all other ingredients in separate mixing bowl. Let rest in pan and plate.
